- Preheat oven to 350 degrees.
- Arrange the shells on a parchment-lined baking sheet. Divide the bacon and apples among the shells.
- In a large measuring cup, whisk eggs, mustard, salt, pepper and nutmeg. Pour mixture over apples. Place a small amount of Boursin cheese in the middle of each shell.
- Bake 15 minutes, making sure egg is set, the cheese is melted and the shell edges are slightly brown. Let cool before serving.
