These Bagel Pizzas are perfect for school lunches, great for birthday parties and are a speedy, yet nutritious dinner solution. With spinach hidden under a layer of golden, melted cheese, this is a recipe you can feel good about serving your family. Both kids and adults will love the flavor and versatility of these cheesy Bagel Pizzas.


Ingredients

Scale
  • 1 whole-grain bagel
  • 4 tablespoons sauce or (homemade) pesto
  • 1/4 cup spinach torn into small pieces
  • 2 slices muenster cheese

Instructions

  1. Slice bagel in half. Top each half with 2 tablespoons of sauce. Tear spinach into small pieces and evenly top each bagel pizza with spinach leaves. Place bagel pizza in the oven or toaster oven. Toast until spinach has wilted and bagel is crunchy about 5 minutes. Place a piece of cheese on top of each bagel and broil for 2 minutes, until cheese is golden and bubbly.
  2. These bagel pizzas are best served warm but can be kept in the fridge for up to a day and reheated, or prepared, frozen and thawed.
