Instructions
  1. Remember when using canned items to check the ingredients list.
  2. Turn on stovetop. Heat a large pot until warm.
  3. When pot is warm, add EVOO and lightly brown meat. To prevent the meat from drying out, do not cook it entirely.
  4. Remove meat from pot, leaving remaining liquid in pot.
  5. Add bourbon, wine or beef stock to pot to deglaze the bottom. (Deglazing pulls flavor.)
  6. Wait 30-60 seconds before adding peppers, onions, garlic and celery. Cook vegetables until onions are translucent.
  7. Add meat back into pot.
  8. Add diced tomatoes, whole peeled tomatoes and tomato sauce.
  9. Add cumin, red pepper or chili powder, black pepper, white pepper, coriander, chili powder and hot sauce. Simmer for 30 minutes, stirring occasionally.
  10. Add tomato paste, beans and salt. Simmer for 10 minutes, stirring occasionally.
  11. Serve in a bowl with a dollop of greek yogurt and grated cheese. Garnish with scallions or chives.
