REAL-food ingredients

We absolutely love broccoli salad and all of its flavor. While store-bought may taste great, most brands don’t use real food ingredients. Instead, they use refined white sugar or mayo that’s a combination of vegetable oil and olive oil (who knows if the olive oil is even 100% pure?) Or, worse yet, they use refined oil and completely omit EVOO from the equation.

Ingredients

Other Ingredients:
  • 2 medium heads raw broccoli (approximately 5 cups, chopped)
  • 1/2 cup raisins or currants (no oil or sugar added)
  • 1/2 cup finely chopped onion
  • 1/2 cup roasted sunflower seeds or pumpkin seeds
  • 5 slices bacon, crisp-cooked, drained and crumbled (optional)
  • 1/4 cup freshly grated cheddar cheese
Optional Topping:
  • 1/2 cup fresh blueberries

Instructions

  1. In a small bowl, mix all dressing ingredients.
  2. In a large bowl, combine remaining ingredients. Drizzle dressing over broccoli mixture and toss to coat. Chill broccoli salad in the refrigerator for several hours before serving.
  3. Optional: Garnish with blueberries before serving.
