  1. In a food processor or high powered blender, combine carrots, chickpeas and cilantro. Pulse until finely grated (30-60 seconds). Scoop carrot mixture into a medium bowl.
  2. Add remaining ingredients (except EVOO) to carrot mixture. Mix to combine.
  3. Heat oil in a large skillet over medium-low heat. Scoop generous heaped tablespoons of the mixture into the preheated pan and cook until golden brown on both sides, about 3 minutes per side. Serve warm.
Recipe Notes

Substitute oat flour with white whole wheat flour.
