Chicken Caesar Wraps

Ingredients
- 2 cups cooked chicken (or rotisserie chicken), chopped
- 3 cups romaine lettuces, chopped
- 2/3 cup cherry tomatoes, halved
- 1/4 cup freshly grated parmesan cheese
- 1/3 cup Primal Kitchen Caesar Salad Dressing
- freshly ground black pepper, to taste
- 4 large tortillas
- 1 teaspoon extra virgin olive oil
Instructions
- Preheat a panini press, pan or electric griddle (like this).
- Combine all the ingredients, excluding the tortillas and EVOO, in a mixing bowl.
- Take a generous spoonful of the mixture and lay it in a line along one edge of each tortilla.
- Carefully fold in the sides of each tortilla and then roll them up tightly (similar to a burrito), securing the wraps with toothpicks if needed.
- Spread a thin layer of extra virgin olive oil on the outside of each wrap. Place the wraps with the seam side facing downward in the heated panini press, pan or griddle and cook until toasted on both sides, about 1-2 minutes per side.
- Remove your Chicken Caesar Wraps from the heat, slice them in half, and enjoy the delightful combination of warm, toasted tortillas and classic Caesar flavors.
