Chicken Parmesan
Healthy eating at it's finest. Here's a guilt-free spin on traditional chicken parmesan.

Instructions
  1. Pre-heat oven to 350 degrees F and cover a large baking sheet with parchment paper.
  2. In a bowl, combine flax seeds, breadcrumbs, paprika and garlic powder.

  3. Evenly coat a large plate with mixture.

  4. Beat eggs in a shallow, medium-large bowl.
  5. Dip chicken breast in beaten eggs.
  6. Place chicken on breadcrumb mixture; careful not to drip egg on mixture or the crumbs won't stick to the chicken.

  7. Scoop and press the crumbs onto both sides of the breast.

  8. Repeat for each chicken breast and place on baking sheet.

OPTIONAL:
  1. Heat 1/4 cup evoo in a large skillet on medium-high heat. Once evoo is heated, place each piece of chicken in skillet and cook until golden brown, about 2 minutes on each side. The chicken will finish cooking in the oven.
  2. Place each piece of chicken back on baking tray.
Final Prep:
  1. Bake chicken for 30 minutes or until no longer pink in the center.
  2. While chicken is baking, warm your tomato sauce over medium heat. Flavor your sauce to your liking. I am a garlic lover, so I often add garlic to my sauce as well as herbs such as oregano, thyme and parsley. I just throw a dash of this and a dash of that, taste test and voila! How you flavor your sauce is entirely up to you.
  3. 2 minutes before chicken is done baking, top each piece of chicken with 1 slice of mozzarella cheese. Place chicken back in the oven for 2 minutes or until cheese is melted.
  4. Remove the chicken from the oven and top with a spoonful of sauce. Garnish with 2 basil leaves. I finely chop my basil before garnishing. Herb shears work great for this and cut the time in half!!!
  5. Serve and enjoy!
Optional Side:
  1. Serve your chicken with 1/4 cup of FfL approved pasta or baked spaghetti squash. Make the chicken your main dish and eat the pasta as a side.
