Cucumber salad is garden-fresh and a great side dish for the summer! Prep it ahead of time to top salads with, eat as a snack or serve as a side. You can customize the dressing by adding some fresh minced garlic, changing up the dried herbs or even using a different type of vinegar.

Instructions
  1. Clean and chop cucumbers, tomatoes and onions. Place in a large mixing bowl and set aside.
  2. In a medium bowl, whisk honey, apple cider vinegar, evoo, mediterranean herb blend and salt.
  3. Pour honey mixture over the chopped vegetables. Toss and coat evenly.
  4. Allow salad to marinade for at least 2 hours.
  5. Stir, top salad with feta, sliced avocado and chopped basil leaves.
  6. Enjoy!
