Early Morning Mushroom and Feta Eggs
This is a quick and easy way to spruce up bland scrambled eggs. In 5 minutes flat, you'll have a breakfast that's restaurant worthy. Instructions
  1. Using medium heat, melt coconut oil in a small pan. Add sliced mushrooms and cook for 2 minutes.
  2. Pour beaten eggs over mushrooms.
  3. Add salt and pepper and fold eggs over mushrooms.
  4. Cook for 1-2 minutes, until underside of eggs are cooked.
  5. Flip eggs and cook an additional 1-2 minutes until eggs are cooked through.
  6. Remove from heat and top with feta cheese.
  7. These eggs pair wonderfully with a sweet potato. Prepare your sweet potato ahead of time or in the microwave while your eggs are cooking.
  8. Enjoy!
