
Easy No-Mayo Coleslaw

Description
Every cook needs a recipe or two that never fails. This easy no-mayo coleslaw is a healthier version of its traditional counterpart and only takes 5 minutes to make. What a great topping or side for any occasion.
Ingredients
- 3/4 cup Greek yogurt
- 1/2 lemon, juiced (approx. 1 Tbsp. + 1 tsp.)
- 1/8 teaspoon celery seed
- 1/4 cup honey
- 1/4 teaspoon Himalayan pink salt
- 1/2 teaspoon black pepper
- 1/2 cup finely chopped onion
- 1 teaspoon jalapeño, minced (optional, to taste)
- 16 ounce bag of finely shredded cabbage/carrot coleslaw mix
Instructions
- In a large bowl, combine and mix all ingredients except jalapeño, onion and cabbage until smooth and creamy. Taste and season with extra salt and pepper, if needed.
- Add coleslaw mix, onion and minced jalapeño to bowl. Toss until evenly combined.
- Cover and refrigerate for at least 2 hours. This will give a nice crunch to the salad. If you prepare it the day before, the slaw will release moisture and become softer, but this imparts delicious flavor. So, you decide which texture and flavor you like best!
