Easy Overnight French Toast Bake

Overnight breakfast bakes are our favorite thing to make on the weekends or to serve for a holiday breakfast.

This super delicious Overnight French Toast Bake takes breakfast to a whole new level. It’s simple to make, beyond delicious and is the perfect warmup throughout the week. It’s made from pieces of bread layered on top of a sugary apple mixture, covered in egg and topped with cinnamon, then baked to perfection. Over the years, it’s by far become one of our most popular breakfasts.

What type of bread should I use?

The sky is the limit when choosing a bread. Traditional french toast bakes often use Challah, Italian, sourdough or French bread. We typically head to the local bakery and whatever bread they have on hand that looks and smells delicious, plus is made with limited (FfL-friendly) ingredients, is what we use. If you try other breads, you’ll have to let us know how it turns out!

Why does the bake need time to soak?

You want the egg mixture to soak deep into the bread, so it makes a custardy center. If you don’t allow your bread to soak for 4+ hours, you won’t get that nice soft texture and may end up with a soggier version.

Can I freeze this?

This dish is super freezer-friendly. You can prepare it and freeze it before or after baking. If it’s been baked, allow it to thaw overnight and then bake it in the oven at 350 for 20 minutes, until the center is warm.

Can I cook it in a slow cooker?

Yep, just prepare the french toast in your slow cooker, rather than a baking dish, refrigerate and then cook in a slow cooker on low for 4 hours or high for 2 hours.

It’s made from pieces of bread layered on top of a sugary apple mixture, covered in egg and topped with cinnamon, then baked to perfection. Instructions

4-24 hours before baking:

  1. Slice French bread into slices, 1-inch thick and set aside.
  2. In a large bowl combine apple slices, raisins, sugar, 1 teaspoon cinnamon and melted butter. Toss to coat apples. Spread apple mixture evenly over bottom of a 12×8 nonstick baking dish.
  3. Arrange sliced bread tightly on top of apples.
  4. In a medium bowl mix eggs, milk and vanilla. Pour egg mixture over bread, soaking bread completely. Sprinkle additional cinnamon over bread (to lightly coat). Cover and refrigerate 4-24 hours.

Baking:

  1. Preheat oven to 375 degrees. Bake covered with foil for 40 minutes. Uncover and bake an additional 10 minutes. Serve warm and enjoy!

Notes

Use gluten-free ingredients, if necessary.
