  • 8 cups chicken broth (two 32 oz. boxes)
  • 2 (14.5 oz) can Great Northern beans (substitute with your favorite beans), rinsed and drained
  • 1 cup medium salsa
  • 1 (14.5 oz.) can Italian diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon minced garlic
  • 2 tablespoons red wine vinegar
  • 1 (10 oz.) pack frozen spinach, thawed (or 2 cups fresh spinach, chopped)
  • 2 (9 oz.) packs tortellini
  • 2 cups cooked diced chicken (optional)
  • Parmesan or Romano cheese (optional)


  1. In a large soup kettle, add all ingredients (except the tortellini and cheese) and bring to a boil. Add tortellini and cook approximately 8 minutes or until all the tortellini are floating on top. Serve and garnish with a small amount of freshly grated cheese (optional).


Vegan-/Vegetarian-friendly: Substitute chicken broth with vegetable broth and eliminate the cheese.
