  1. In a bowl, whisk eggs, milk or water, salt and pepper. Heat a nonstick skillet over medium heat. Cook and stir eggs in hot skillet until completely set. Remove from heat.
  2. Spread pesto evenly on bread bottom and top with a slice of cheese. Spoon eggs over cheese and layer with tomato, onion and greens. Place bread top on. Wrap sandwich in foil.
  3. Place on baking sheet and bake at 400 degrees for 10-15 minutes or until heated through. Let stand for 5 minutes and serve.

Gluten-free: Focaccia bread can be substituted with a gluten-free alternative.
