This sensational sandwich is filled with scrambled eggs, smoked provolone, ripe tomato, baby spinach and pesto spread and pairs perfectly with fresh fruit.

- In a bowl, whisk eggs, milk or water, salt and pepper. Heat a nonstick skillet over medium heat. Cook and stir eggs in hot skillet until completely set. Remove from heat.
- Spread pesto evenly on bread bottom and top with a slice of cheese. Spoon eggs over cheese and layer with tomato, onion and greens. Place bread top on. Wrap sandwich in foil.
- Place on baking sheet and bake at 400 degrees for 10-15 minutes or until heated through. Let stand for 5 minutes and serve.
