Green Beans with a Lemon Dill Vinaigrette

What a fantastic way to enjoy charred green beans as the perfect side dish.

These grilled beans are easy and delicious and will be a hit with your family. You can easily substitute a skillet on your stovetop to make this tasty spin on “steamed” green beans all year round.

Pre-chopping, cutting or cooking ingredients really helps to reduce stress and simplify dinner on busy weeknights. We know, we know, we’re always talking about meal prep, but it truly is the holy grail to healthy eating!

  • Clean and trim green beans
  • Chop garlic (if you’re using fresh)

Some ways to “reinvent” your leftover green beans:

  • Chicken Wrap: In a wrap, combine chicken, leftover green beans (chopped), Muenster cheese and greens. Grill on both sides or heat in the toaster oven and serve.
  • Buddha bowls: In a bowl combine chopped green beans, a small amount of wilted spinach, protein of choice, roasted sweet potato home fries, and avocado.
  • Eggs or an Omelet: Add leftover green beans to eggs or an omelet for an easy, yet amazing breakfast.
  • Cold, on top of a salad

  1. Rinse trimmed green beans under cold water; towel dry.
  2. Combine green beans, olive oil, garlic, dill, salt, pepper and lemon juice in a large mixing bowl; toss with tongs until well coated. Allow green beans to marinate for 10 minutes.
  3. Preheat grill for medium heat.
  4. Place green beans on a grill basket and place the grill basket on preheated grill. Cook and stir green beans until charred, about 7-10 minutes.
  5. These can also be cooked stir-fry style in a wok or in the oven on a sheet pan. Grease pan, cook and stir beans until desired texture/crunchiness.
  6. Add almonds to beans and heat through until almonds are toasted. Remove from heat and serve immediately.
