Grilled Pineapple and BBQ Shrimp Tacos
Bring a taste of Mexican flare to your table with this jazzy Grilled Pineapple and BBQ Shrimp Taco recipe that combines the sweetness of fresh shrimp with a spicy BBQ sauce, topped with the tropical flavor of grilled pineapple. This is one that will delight your family as well as guests for a memorable BBQ.
Instructions
Optional:
  1. In a medium bowl, marinade shrimp in BBQ sauce for 1 hour prior to grilling. Discard marinade upon threading shrimp onto skewers.
Grill:
  1. Preheat grill to medium-high heat. Thread shrimp onto skewers, piercing once near the head and once near the tail.
  2. Lightly oil grill grate, if needed. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste frequently with BBQ sauce while grilling, especially if you did not marinade shrimp ahead of time. While grilling shrimp, grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear. Remove pineapple and shrimp from the grill. Slice pineapple into small cubes and remove shrimp from skewers.
  3. Warm tortillas in the oven for 2 minutes while slicing the grilled pineapple. Keep tortillas warm by wrapping them in a cloth.
Fixings:
  1. On the table, set out your fixings: cilantro, cabbage, sliced avocado/ guacamole, lime wedges, hot sauce, tortillas, shrimp and pineapple. Have fun building your shrimp tacos. Squeeze a tiny bit of lemon juice over each taco before eating. ENJOY!

Tips:

  • Herb shears work really well for finely cutting cilantro.
  • When choosing a tortilla, look for FfL-friendly ingredients. A good place to find tortillas, if not from a local bakery, is in the refrigerator or freezer section. We typically purchase partially cooked tortillas from the brand "Cabo Chips" but there are many other companies such as "Food For Life." (Why the freezer or fridge section? No added preservatives = limited shelf life.)
