Optional:
- In a medium bowl, marinate shrimp in BBQ sauce for 1+ hours prior to grilling. Discard marinade upon threading shrimp onto skewers.
Grill:
- Preheat grill to medium-high heat. Thread shrimp onto skewers, piercing once near the head and once near the tail.
- Lightly oil grill grate, if needed. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste frequently with BBQ sauce while grilling, especially if you did not marinade shrimp ahead of time. While grilling shrimp, grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear. Remove pineapple and shrimp from the grill. Slice pineapple into small cubes and remove shrimp from skewers.
- Warm tortillas in the oven for 2 minutes while slicing the grilled pineapple. Keep tortillas warm by wrapping them in a cloth.
