Grilled Pineapple and BBQ Shrimp Tacos

We typically purchase partially cooked tortillas from the brand “Cabo Chips” but there are many other companies such as “Food For Life.” (Why the freezer or fridge section? No added preservatives = limited shelf life.)

Leftovers are king when trying to simplify eating real foods. There’s nothing better than having prepared food on hand for quick and easy meals throughout the week. But eating the same thing 2 or 3 nights in a row can get a tad boring.

To break up the monotony, here are some of our favorite ways to reinvent your leftover grilled pineapple and BBQ shrimp and create an entirely new meal:

  • Toss your leftover shrimp and pineapple with Pesto, penne pasta and sauteèd spinach.
  • Make a shrimp quiche.
  • Top a homemade pizza with your leftover shrimp and pineapple (using a dough ball, a tortilla or a toasted bagel).
  • Mix leftovers in a bowl with rice, beans and sliced avocado.
  • Serve them on a bed of greens with a citrus vinaigrette.
  • Add leftovers to quesadillas and top with fresh pico de gallo.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 jar BBQ sauce
  • 1 small pineapple, sliced into rings
  • 8 corn tortillas
  • 1/2 cup cilantro, chopped
  • 1 small red cabbage, chopped
  • 12 sliced avocados or guacamole
  • hot sauce (to taste)
  • 1 fresh lime, sliced into wedges (optional)
  • 6+ skewers

Instructions

Optional:

  1. In a medium bowl, marinate shrimp in BBQ sauce for 1+ hours prior to grilling. Discard marinade upon threading shrimp onto skewers.

Grill:

  1. Preheat grill to medium-high heat. Thread shrimp onto skewers, piercing once near the head and once near the tail.
  2. Lightly oil grill grate, if needed. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste frequently with BBQ sauce while grilling, especially if you did not marinade shrimp ahead of time. While grilling shrimp, grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear. Remove pineapple and shrimp from the grill. Slice pineapple into small cubes and remove shrimp from skewers.
  3. Warm tortillas in the oven for 2 minutes while slicing the grilled pineapple. Keep tortillas warm by wrapping them in a cloth.

Fixings:

  1. On the table, set out your fixings: cilantro, cabbage, sliced avocado/ guacamole, lime wedges, hot sauce, tortillas, shrimp and pineapple. Have fun building your shrimp tacos. Squeeze a tiny bit of lemon juice over each taco before eating. ENJOY!
