Healthy Sweet Potato Home Fries
These baked home fries are an honest-to-goodness staple in our kitchen. No matter what day of the week it is, if you sift through our fridge, you’ll most likely find a container of these tasty treats. We eat them in burger bowls, at breakfast with eggs, use them to top salads or simply serve as a side. Because it takes a bit of chopping, I typically make a big batch at the beginning of the week and serve them with whatever tickles my fancy. You can even freeze them for later use!
