These Hidden Veggie Cauliflower Scrambled Eggs are a great way for your picky eaters to get all the benefits of veggies without receiving any pushback. Your kids will never know that there’s hidden veggies inside.
If your picky eater is more like a hidden veggie detective
Add in as much veggie puree as you can get away with. In the beginning, this may only be a tablespoon or two of puree, rather than 1/4 cup; gradually increase the amount of puree added until you’re able to add the full amount.
Choosing your puree
Pureeing food is a simple, incognito way to add just about any fruit, veggie or protein into a meal so that your picky eaters won’t complain. This recipe spotlights cauliflower puree; however, we’ve successfully substituted the cauliflower with butternut squash, pumpkin, sweet potato and carrot puree.
How to puree your cauliflower
Pureeing is MUCH more simple than it sounds, especially when it comes to cauliflower.
Basically, all you need is a steamer, pot or microwave to soften your veggies and a food processor or high-speed blender. We often make a big batch, pre-portion it in mason jars and store it in our freezer. That way we can use it as necessary and simply replenish it whenever necessary.
Steaming in a pan on stovetop:
- Buy a bag of cauliflower rice or roughly chop a head of cauliflower.
- Put 1-2 inches of water in the bottom of a pot that your steamer basket or insert fits into and bring to a boil.
- Put your trimmed and cleaned cauliflower florets or cauliflower rice in the steamer basket and set the basket over the boiling water.
- Reduce heat to a simmer, loosely cover the pot with a lid and steam until the cauliflower is tender (3-8 minutes, depending on size).
- Let the cauliflower cool, then put into the food processor and puree until smooth and creamy. Add a few tablespoons of liquid (water or cooking juices from boiling/steaming) to help the pureeing process, if necessary.
Steaming in a steamer basket:
- Buy a bag of cauliflower rice or roughly chop a head of cauliflower.
- Put 1-2 inches of water in the bottom of a pot and bring to a boil.
- Add your cauliflower and reduce heat to a simmer.
- Loosely cover the pot with a lid and steam until cauliflower is tender (3-8 minutes, depending on size).
- Let the cauliflower cool, then put into the food processor and puree until smooth and creamy. Add a few tablespoons of liquid (water or cooking juices from boiling/steaming) to help the pureeing process, if necessary.
Steaming in the microwave:
- Buy a bag of cauliflower rice or roughly chop a head of cauliflower.
- Add cauliflower to a microwave-safe bowl with a few tablespoons of water.
- Loosely cover the bowl with a damp paper towel and microwave in 60-second intervals until the cauliflower is tender.

Ways to reinvent your leftovers:
- Breakfast burrito: Leftover eggs, beans, rice, salsa, cilantro and cheese all folded tightly into a burrito.
- Breakfast quesadilla: Cheddar cheese and applewood smoked ham folded in a tortilla and baked or cooked in a skillet until cheese has melted and tortilla is deeply golden and crisp.
- Toasted brekki sandwich: Leftover eggs and mashed avocado on a lightly toasted bagel or English muffin.
- Homemade fried rice: Toss scrambled eggs with cooked whole grain rice and a little bit of liquid aminos. You can even add some shredded carrots, green onions and peas.
