This Hidden-Veggie Guacamole is a great way to get even the pickiest of eaters to eat their spinach! The brilliant thing about this recipe is that this is absolutely packed full of healthy fats and nutrient-dense spinach, all while still tasting like a delicious dip. Your kids won’t even notice the spinach in this homemade guacamole!

How to choose your avocado
Have you ever gotten home from grocery shopping and excitedly sliced into your avocado, only to find a brown mushy center? We have! Choosing the perfect avocado can be a bit tricky, but it’s not impossible.
The kind of avocado you want to use for this, or any recipe, is a perfectly ripe avocado. What does that look like? The avocado skin should be purplish in color. It should yield to gentle pressure, but not feel mushy. Avoid avocados with an extremely dark/ black skin. You’re almost guaranteed to cut into them and find those dreaded brown spots.
Another great way to check whether your avocado is ripe or not is to check under the stem. Peel back the stem or cap at the top of the avocado. If it comes off easily and there’s a green color underneath, you’ve got a ripe avocado. If you pull back the stem and find a brownish color underneath, you’ll want to pass on that avocado… it’s overripe.
How to lengthen the life of your avocados
If you’re picking avocados in advance, choose ones with a green outer shell. The stem shouldn’t come off. Allow them to sit on the counter until they’re just about ripe.
Once your avocado has almost reached its peak ripeness, move it to the crisper in your refrigerator. This slows the ripening process and helps prevent your avocado from browning. When you’re ready to eat it, hopefully within a day or two, remove it from the fridge and enjoy that green creamy goodness!

Ingredients
- 2 ripe avocados
- 1/2 cup fresh cilantro leaves
- 1 cup spinach
- 1/4 cup chopped onions
- 2 tablespoons lime juice (about 1 lime)
- 1/4 teaspoon Himalayan pink salt
- 1/8 teaspoon black pepper
Optional Additions (If your family enjoys a little heat, add one)
- 1–4 dashes hot sauce
- jalapeño, finely chopped
Instructions
- Add avocado, cilantro, spinach, onion, lime juice, salt and pepper into a food processor or high-speed blender and blend until creamy. Add hot sauce or jalapeños to taste (optional), blend until combined.
- Serve as a dip or on one of your family’s favorite Mexican dishes (tacos, salads, burrito bowls). Store in the fridge for up to 3 days.
- Add 1 avocado, cilantro, spinach, lime juice, salt and pepper into a food processor or high-speed blender and blend until creamy. Add hot sauce or jalapeños to taste (optional), blend until combined.
- In a large bowl, gently mash the remaining avocado into large chunks. Add onions and the creamy avocado; blend into the chunky. Gently stir to combine.
- Serve as a dip or on one of your family’s favorite Mexican dishes (tacos, salads, burrito bowls). Store in the fridge for up to 3 days.
