  1. Preheat oven to 375 degrees. Grease 9-10 cup muffin tin with coconut oil.

  3. Mix all the finely chopped vegetables, herbs and tomatoes in a bowl. Portion the vegetable mixture into the muffin tins.   4. In a separate bowl, combine Parmesan and feta cheese.
  5. Whisk eggs, milk and half of the cheese blend together in bowl. Season with salt, pepper and hot sauce to taste.
  6. Pour the egg mixture into each muffin cup, making sure there’s an equal amount in all muffin cups. Fill each muffin cup half to three-quarters full.
  7. Divide the remaining grated cheese blend and top each muffin cup.
  8. Bake in the center of the oven until egg is set for about 25 minutes.
