Description

Mediterranean Egg Mufflets are the perfect mixture of a muffin and an omelet packed with onions, spinach, peppers, garlic, tomatoes and cheese. They’re a delicious and healthy way to start your week! You can prep everything ahead of time and put them together in the morning or bake, refrigerate and reheat them throughout the week! This simple, versatile recipe is low carb, packed with protein and low in calories, too. Feel free to get creative and substitute different vegetables or herbs!

  1. Preheat oven to 375 degrees. Grease 9-10 cup muffin tin with coconut oil.
  2. Chop vegetables, herbs and strain diced tomatoes.
  3. Mix all the finely chopped vegetables, herbs and tomatoes in a bowl. Portion the vegetable mixture into the muffin tins. (Approximately a quarter full.)
  4. In a separate bowl, combine Parmesan and feta cheese.
  5. Whisk eggs, milk and half of the cheese blend together in bowl. Season with salt, pepper and hot sauce to taste.
  6. Pour the egg mixture into each muffin cup, making sure there’s an equal amount in all muffin cups. Fill each muffin cup half to three-quarters full.
  7. Divide the remaining grated cheese blend and top each muffin cup.
  8. Bake in the center of the oven until egg is set for about 25 minutes. Serve with fresh fruit and enjoy!

Notes

*Remember, you can prep everything ahead of time and put them together in the morning OR bake, refrigerate and reheat them throughout the week. These Egg Mufflets are great on-the-go!
