Phyllo Dough Herbed Chicken
These light and crispy phyllo puffs are stuffed with chicken, spinach and a creamy blend of garlic and herb cheese filling. They’re the perfect healthy meal, whether you’re looking for low-key or entertaining an elegant dinner for guests.

Chicken (can be done in advance):
  1. Trim off excess fat and cut each chicken breast in half, hamburger style, so you have 6 pieces of chicken.
  2. Add EVOO in a large skillet over medium heat. Add chicken to skillet and season with salt and pepper. Sear chicken until golden brown, about 3 minutes per side. Remove chicken and allow to cool for 30 minutes or refrigerate for up to 24 hours.
Putting it together:
  1. Thaw refrigerated pastry sheet at room temperature for 30 minutes. If your pastry sheets are frozen, thaw in the fridge overnight or at room temperature for 2 hours.
  2. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  3. Unfold pastry dough. (If you notice your dough is sticking to the counter or plate, unfold on parchment paper or a lightly floured surface.) For each chicken breast, stack 2-3 sheets of phyllo dough, one on top of the other, to wrap your chicken, spinach and cheese in.
  4. Evenly divide and spread Boursin cheese on top of each piece of chicken (about 1 tablespoon per piece).
  5. Lay a few spinach leaves (about 1/4 cup) in the center of each stack of phyllo dough. Place a piece of cooled chicken, cheese side down, on top of spinach.
  6. Mix egg and water. Brush the edges of each square (surrounding the chicken) with the egg mixture. Fold each corner to the center of the chicken to create a packet. Carefully place each chicken packet, seam-side down, on baking sheet. Brush each piece with remaining egg mixture.
  7. Bake for 25 minutes, or until the chicken is cooked and pastry is golden.
Recipe Notes

Suggestion: Serve with a bag of frozen broccoli, steamed and seasoned, and a small side of whole-grain rice or sweet potatoes.
