This dressing is an incredible addition to a crisp fall salad topped with apples and toasted walnuts or a warm rotini paired with Brussels sprouts and beets.
Ingredients
- 1/3 cup pumpkin puree
- 1/4 cup apple cider vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons pure maple syrup
- 1/4 cup extra virgin olive oil (preferably mild flavored EVOO)
- 1 teaspoon dried thyme
- 1 pinch Himalayan pink salt
- 1 pinch pepper
Instructions
- In a medium bowl, mix all ingredients together. Use immediately or refrigerate dressing in an airtight jar or container.
