This Sheet Pan Shrimp Boil With Sausage & Veggies is super easy, filling and packed with FfL-friendly ingredients. Just toss everything together, pop it in the oven, and in no time, you’ve got a delicious dinner with minimal effort.

Instructions

  1. Preheat oven to 425 degrees.
  2. Place tomatoes and zucchini on a sheet pan and drizzle with 1 tablespoon EVOO, sprinkle with ¼ teaspoon salt, ¼ teaspoon pepper, and roast in the oven for 10 minutes.
  3. Place the corn, shrimp, and sausage in a bowl and toss with the remaining 2 tablespoons of EVOO, ¼ teaspoon sea salt, ¼ teaspoon black pepper, paprika, garlic, and cayenne pepper.
  4. Add the corn, shrimp, and sausage mixture to the sheet pan, scattering the ingredients around evenly.
  5. Return the pan to the oven and cook for 15 minutes.
  6. Serve as-is! For hearty appetites, serve with a side of brown or wild rice. Add watermelon as a side dish or dessert.

Notes

Substitutions: Don’t like shrimp? Substitute with fish, chicken, tofu, or chickpeas. Adjust cook time accordingly.
