Energy Boosting Quinoa, Egg and Avocado Breakfast Bowls
This simple breakfast bowl is an easy and nutritious way to start your day. The quinoa combined with creamy avocado and perfectly cooked eggs is not only delicious, it’s sure to keep you energized and on track throughout the day.

Instructions
  1. In a medium bowl, whisk together 1 1/2 teaspoons EVOO, vinegar and pinch of salt.
  2. Add quinoa, tomatoes, beans and cilantro to bowl.
  3. Toss quinoa mixture, evenly divide between two small bowls.
  4. Heat a large non-stick pan.
  5. Evenly coat bottom of pan with 1/2 teaspoon of EVOO.
  6. Crack each egg into pan, using only half the pan.
  7. Add spinach to other half of pan.
  8. Add salt, pepper and red pepper flakes to spinach and eggs, to taste.
  9. Cover with lid and cook until white is set but yolk is still runny and spinach is wilted, approximately 3 minutes.
  10. Top each quinoa bowl with 1/4 avocado, 1/2 cup spinach and 2 eggs.
  11. Enjoy!
