This Thanksgiving, ditch the marshmallows and reduce the sugar with a side dish equally as satisfying. This Sweet Potato and Kale Hash puts a healthy, yet delicious spin on a traditional Sweet Potato Casserole and will have your guests reaching for seconds, even thirds!
Sweet Potato and Kale Hash
This delicious skillet sensation can be served alongside scrambled eggs at breakfast, a turkey burger for lunch or paired with flaky fish for dinner. It compliments almost any meal and will satisfy your sweet and spicy cravings all in one!
Dice sweet potatoes and place them in a glass bowl or on a plate. Cover with a moist paper towel and microwave until sweet potatoes are fork tender, approximately 2-4 minutes.
Heat evoo in a large skillet over medium heat. Add onions and sauté until translucent, approximately 2-4 minutes.
Increase heat and add sweet potatoes to the skillet. Season with cinnamon, salt and pepper.
Sauté onions and sweet potatoes until sweet potatoes are slightly browned, approximately 5 minutes. Stir frequently to prevent sweet potatoes from sticking and burning.
Add maple syrup, toss and add chipotle chili pepper. Sauté an additional minute.
Lower heat to medium and add kale to skillet.
Season with salt, stir and cook an additional 2-4 minutes, until kale has wilted.
