Mayo-free

If you’re a regular around here, you already know we love to eat lighter, mayo-less versions of most recipes. Not because we’re against mayo, but because we prefer the flavor of yogurt, hummus, olive oil or tahini to create a creamy consistency instead. We’re partially Mediterranean at heart!

Other Ingredients:

  • 2 medium heads raw broccoli (approximately 5 cups, chopped)
  • 1/2 cup raisins or currants (no oil or sugar added)
  • 1/2 cup finely chopped onion
  • 1/2 cup roasted sunflower seeds or pumpkin seeds
  • 5 slices bacon, crisp-cooked, drained and crumbled (optional)
  • 1/4 cup freshly grated cheddar cheese

Optional Topping:


Instructions

  1. In a small bowl, mix all dressing ingredients.
  2. In a large bowl, combine remaining ingredients. Drizzle dressing over broccoli mixture and toss to coat. Chill broccoli salad in the refrigerator for several hours before serving.
  3. Optional: Garnish with blueberries before serving.
