Sautéed Zucchini with Thyme
This stove-top zucchini recipe is such a simple, yet delicious method to prepare a seasonal side dish!

Instructions
  1. In a large bowl, toss zucchini with EVOO, thyme, salt and pepper.
  2. Heat a large non-stick skillet on high heat.
  3. Add zucchini to skillet and sauté for 10-12 minutes, or until zucchini is cooked to desired texture. Turn zucchini every 2 minutes so it cooks evenly and doesn't burn.
  4. Serve.
"Re-Invent" Leftovers:
  1. Eggs or an Omelet: Add leftover cooked zucchini to eggs or an omelet for an easy, yet amazing breakfast.
  2. As a topping: Top a salad, pizza or even put them in a wrap with some chicken, feta and spinach. Get creative!
