Ingredients
- 2 heads romaine, cut in half lengthwise
- 2 teaspoons extra virgin olive oil
- Himalayan pink salt and pepper, to taste
- 2 tablespoons freshly grated Parmesan cheese
Homemade Dressing:
- 1 tablespoon minced garlic
- 2 teaspoons Greek yogurt
- 2 teaspoons Dijon mustard
- 4 tablespoons extra virgin olive oil
- 1 tablespoon apple cider vinegar
- Himalayan pink salt (to taste)
- black pepper (to taste)

Instructions
Homemade Dressing:
- Combine garlic, Greek yogurt and mustard in a bowl. Whisk ingredients together. Add olive oil and vinegar. Whisk and season to taste with salt and pepper.
Romaine:
- Preheat grill to medium heat. If you don't have access to a grill, you can sear your romaine in a pan on the stove.
- Brush both sides of each romaine lettuce half with 1/2 teaspoon olive oil. Season with salt and pepper, to taste.
- Place lettuce cut side down on preheated grill. Cook until lettuce is slightly wilted and charred, about 3 minutes. Flip the lettuce so the cut side is up. Using a pastry brush or a small spoon, paint the dressing or drizzle balsamic over the lettuce, making sure to get dressing between the leaves.
- Grate Parmesan cheese over lettuce. Cover for 1-2 minutes until cheese is melted. Remove from heat and serve immediately.
