
Healthy Peanut Butter Cup Rice Krispie Treats (No Bake + Dairy-Free)

Description
These four-ingredient Rice Krispie Treats are made with nut butter, cacao powder and honey instead of marshmallow and refined sugar. Because they’re chock-full of healthy fats and protein they’re extremely filling, making them a great mid-day or pre-post-workout snack.
Ingredients
- 3/4 cup nut butter (almond butter OR peanut butter)
- 1/2 cup honey
- 1 tablespoon cacao powder
- 3 & 1/2 cups plain brown rice crisps or rice puffs
Optional Addition: (added nutrients)
- 1 tablespoon chia seeds
Instructions
- Melt the peanut butter in a large bowl. Stir in the honey and cacao powder until well combined.
- Gently fold in the rice crisps/puffs and chia seeds.
- Press the mixture into an 8″ x 8″ baking pan. Cover and freeze for at least 2 hours before slicing into squares. Enjoy!
Storage Tips
- These treats are best stored in the freezer. Slice them first, then stack them between sheets of parchment paper in an airtight container.
- You can also store them in the fridge, but they may be a bit softer and less sturdy.

Substitutions
If you use extremely runny peanut butter, you may need to add an additional 1/4 – 1/2 cup of rice crisps.
For extra cacao flavor, add an additional tablespoon of cacao powder.
If making rice krispie treats as a dessert, you can melt 1/3 cup of dark chocolate and spread a thin layer on top of krispie mixture before refrigerating.

Delicious! Super simple and such a great treat for those moments when you need something sweet. I came across this recipe and noted to buy the brown rice crisps the next time I went to Whole Foods but then I stumbled upon a version by One Degree Organic Foods (found at Publix) and was able to make them sooner!
I used a combination of homemade almond butter (1/4 cup) and store bought peanut butter (2/4 cup) since I didn’t have enough almond butter.
