This side salad is a staple in our kitchen. You can get creative with whatever fruit, nuts, seeds and cheese you have. It’s an easy, delicious way to get in a few more greens. You can dress it with balsamic and EVOO or one of our healthy homemade dressings!

Description
This side salad is a staple in our kitchen. You can get creative with whatever fruit, nuts, seeds and cheese you have. It’s an easy, delicious way to get in a few more greens. You can dress it with balsamic and EVOO or one of our healthy homemade dressings!
Ingredients
Main Ingredients:
- 1 handful spinach
- 2 tablespoons fruit (seedless clementine, apple, strawberry, fig, watermelon, pomegranate or blueberry)
- 2 teaspoons block cheese (blue, goat, feta, grated Parmesan)
- 1 tablespoon nuts or seeds (pistachios, roasted almonds, sunflower seeds)
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon extra virgin olive oil
Instructions
- Depending on our mood and what the main dish is, we mix and match the fruit, nuts and cheese for our side salad.
- Clean, deseed and peel (if necessary) the fruit of your choice. Using a serrated knife, cut the fruit into small slices.
- In a salad dish, add spinach, sliced fruit and a small handful of nuts (about a tablespoon). Top with two teaspoons of cheese and drizzle lightly with balsamic vinegar and EVOO.
- Serve and enjoy!
