Description

This side salad is a staple in our kitchen. You can get creative with whatever fruit, nuts, seeds and cheese you have. It’s an easy, delicious way to get in a few more greens. You can dress it with balsamic and EVOO or one of our healthy homemade dressings!


Ingredients

Scale

Main Ingredients:

  • 1 handful spinach
  • 2 tablespoons fruit (seedless clementine, apple, strawberry, fig, watermelon, pomegranate or blueberry)
  • 2 teaspoons block cheese (blue, goat, feta, grated Parmesan)
  • 1 tablespoon nuts or seeds (pistachios, roasted almonds, sunflower seeds)

Dressing: Check out your local olive oil and vinegar taproom


Instructions

  1. Depending on our mood and what the main dish is, we mix and match the fruit, nuts and cheese for our side salad.
  2. Clean, deseed and peel (if necessary) the fruit of your choice. Using a serrated knife, cut the fruit into small slices.
  3. In a salad dish, add spinach, sliced fruit and a small handful of nuts (about a tablespoon). Top with two teaspoons of cheese and drizzle lightly with balsamic vinegar and EVOO.
  4. Serve and enjoy!

Notes

We recommend organic ingredients when feasible.
