This healthy Roasted Butternut Squash with cinnamon and maple syrup is one of our favorite comfort foods and is a cinch to make.

It can be served as a side dish or you can get creative and add it to a rice bowl, serve it cold on top of a hearty salad or munch on as a delicious snack. Make plenty to enjoy as leftovers later!

Some ways to “reinvent” your leftover Roasted Butternut Squash:

  • Roasted butternut squash tacos: In a small tortilla, combine butternut squash, black beans, sliced avocado, pickled red onions, chopped fresh cilantro, hot sauce and whatever else you want to toss in there
  • Buddha bowls: In a bowl with a small amount of wilted spinach, sautéed veggies, rice, beans, protein of choice and avocado
  • A spruced-up salad: Cold, on top of a salad with sautéed veggies

Description

This healthy Roasted Butternut Squash with cinnamon and maple syrup is one of our favorite comfort foods and is a cinch to make. Instructions

  1. Preheat oven to 425 degrees.
  2. Toss squash cubes with olive oil, salt, pepper and cinnamon in a large bowl until well coated.
  3. Place the squash on a sheet pan and arrange in one layer. Roast for 30-35 minutes, turning once with a metal spatula, until the squash is tender and lightly browned.
  4. Drizzle 100% pure maple syrup over squash for some added flavor. Enjoy!

Notes

Parchment paper can be used to make clean-up easier.
