  • Prepare Dijon Maple Vinaigrette

  • Chicken Wrap: In a wrap, combine chicken, leftover green beans (chopped), Muenster cheese, and greens. Grill on both sides or heat in the toaster oven and serve.
  • Buddha bowls: In a bowl combine chopped green beans, a small amount of wilted spinach, protein of choice, roasted sweet potato home fries, and avocado.
  • Eggs or an Omelet: Add leftover green beans to eggs or an omelet for an easy, yet amazing breakfast.

This is a great side for any meal with minimal prep time and easy cleanup!


Ingredients

Main Ingredients:

Dijon Maple Vinaigrette:

Toasted Almonds:

  • 1/3 cup chopped almonds (optional: walnuts)
  • 1/4 teaspoon virgin coconut oil

Garnish:

  • 1/4 cup feta

Instructions

Prep:

  1. Preheat oven to 425 degrees. Line baking sheet with parchment paper for easy clean-up.
  2. Clean and trim off the ends of the green beans.

Maple Dijon Vinaigrette:

  1. In a small bowl, mix the maple dressing ingredients together and set aside.

Toasted Almonds:

  1. Heat coconut oil in a skillet over medium heat. Add nuts. Stir constantly for approximately 3-5 minutes (less time if your nuts are finely chopped) until the nuts are evenly coated in the coconut oil and are toasted. It’s important to stir constantly or the nuts will burn. Remove nuts from heat and set aside.

Bake:

  1. Spread the beans out evenly on a baking sheet. Drizzle Maple Dijon Vinaigrette on green beans and toss to coat evenly. Bake for 10 minutes.
  2. Remove beans from oven. Add crushed red pepper and garlic. Stir beans to coat evenly. Bake the beans an additional 5 minutes or until they reach desired crispness/tenderness.
  3. Remove beans from oven. Garnish with almonds and feta. Serve and enjoy!
