Healthy Sweet Potato Home Fries

These baked Sweet Potato Home Fries are an honest-to-goodness staple in our kitchen.

No matter what day of the week it is, if you sift through our fridge, you’ll most likely find a container of these tasty treats. We eat them in burger bowls, at breakfast with eggs, use them to top salads or simply serve as a side.

Because it takes a bit of chopping, we typically pre-chop the potatoes or make a big batch at the beginning of the week and serve them with whatever tickles our fancy. You can even freeze them for later use!

These baked Sweet Potato Home Fries are an honest-to-goodness staple in our kitchen. We eat them in burger bowls, at breakfast with eggs, use them to top salads or simply serve as a side. Instructions

  1. Preheat oven to 400 degrees.
  2. Place chopped potatoes on a large baking pan. Coat potatoes with EVOO, salt and pepper. Use your hands to massage EVOO into potato cubes and evenly spread them into a single layer on the pan.
  3. Bake for 30-40 minutes, tossing occasionally so potatoes crisp up and bake evenly.
  4. For a little added crunch, broil these babies for 5-10 minutes before serving. Pay close attention so they don’t burn while under the broiler! Toss them every 2-3 minutes for an even crunch on all sides.
