Description
A quick, wholesome avocado toast with a fried egg, chia seeds, microgreens, and a hint of lemon and spice—perfect for balanced energy and feel-good nutrition!
Ingredients
- 1/2 teaspoon virgin coconut oil (for greasing the pan)
- 1 large egg
- Pinch of black pepper
- Pinch of Himalayan pink salt
- 1/2 teaspoon chia seeds
- 1 slice whole-grain bread
- 1/4 avocado, mashed
- 4-6 drops lemon juice
- Dash of red pepper flakes (optional)
- Small handful of microgreens
Instructions
- Heat the coconut oil in a small pan over medium heat.
- Crack the egg into the pan and season with salt and pepper to taste. (Optional: Add chia seeds for extra nutrients and flavor.)
- Pan-fry the egg for 1-2 minutes on each side, until the egg white is set but the yolk remains runny.
- Mash the avocado in a bowl and mix in a dash of lemon juice, red pepper flakes (optional), and a pinch of salt and pepper.
