Making this recipe for a crowd

Rather than attempting to cook enough over-easy eggs for a small army, this method allows you to make up to a dozen poached eggs without the stress and effort. Your meal will come together quickly and easily, making it the PERFECT simple, yet elegant breakfast for a crowd.

Some tips:

  • Have children? Make it kid-friendly and fun by allowing them to help mash the avocados!
  • When shopping for bread: Choose FfL-friendly bread, made with limited ingredients that you recognize such as grain, water, yeast and salt. The refrigerator and freezer section of the supermarket is a great place to find these loaves.

Instructions

  1. In a small pan, heat coconut oil.
  2. Crack egg in pan. Add salt and pepper to taste. (We often add chia seeds to our egg while it’s cooking for additional nutrients and flavor.) Pan fry egg, cooking each side for 1-2 minutes until egg white is no longer raw but yolk is still runny.
  3. Mash avocado in a bowl. Add dash of lemon juice to smashed avocado.
  4. Toast bread and top with mashed avocado and fried egg. Add crushed red pepper to taste. Enjoy!

Notes

We recommend organic ingredients when feasible.

Always check for FfL-friendly ingredients.
