
Avocado Toast with an Over Easy Egg

Description
This simple breakfast is easy to make, extremely healthy and downright delicious. Whole grain toast with mashed avocado, a runny egg and a few dashes of crushed red pepper will have your taste buds jumping for joy. The best part? This recipe only uses a handful of ingredients and takes just a few minutes of your time. It just doesn’t get much better than that! This combo is a staple that shows up in our kitchen at least once a week. In less than 10 minutes, you’ll have a restaurant quality, picture perfect breakfast without the hefty price tag!
Ingredients
- 1/8 teaspoon virgin coconut oil
- 1 large egg, fried sunny side up
- 1 pinch black pepper
- 1 pinch Himalayan pink salt
- 1 slice whole-grain bread
- 1/4 avocado, mashed
- dash lemon juice (optional)
- dash red pepper flakes (optional)
Instructions
- In a small pan, heat coconut oil.
- Crack egg in pan. Add salt and pepper to taste. (We often add chia seeds to our egg while it’s cooking for additional nutrients and flavor.) Pan fry egg, cooking each side for 1-2 minutes until egg white is no longer raw but yolk is still runny.
- Mash avocado in a bowl. Add dash of lemon juice to smashed avocado.
- Toast bread and top with mashed avocado and fried egg. Add crushed red pepper to taste. Enjoy!
