This BURGER BOWL is simple to make and full of FLAVOR. We eat this burger bowl almost every week and don’t plan on stopping anytime soon!

After the first bite, I knew that this recipe was a GAME CHANGER. It tasted exactly like a juicy cheeseburger patty, topped with avocado and sweet potato fries. This gem ditches the bun and replaces it with sweet potatoes, making it whole30 approved. The best part? You and your family can enjoy 4 DIFFERENT meals using the leftovers.

Recipe Variations and Simple Swaps

Even if you’re not a fan of spinach, this is a recipe you don’t want to miss. Because the spinach is slightly wilted before serving, it gives this burger bowl a tasty twist on a traditional salad. You can also substitute spinach with butterhead lettuce, but do not wilt before serving.

You can easily swap out the turkey for lean ground beef (check out FfL’s recipe for Sloppy Joes), grilled steak or use black beans in place of meat for a vegetarian option.

 

Busy Nights

For busy nights, chop your sweet potatoes ahead of time or simply microwave or bake them in a foil pack.

A few creative ways to reuse your leftovers:

  • BBQ Turkey Pita Pizza: Toast pita on low for 1 minute. Remove from toaster, spread BBQ sauce on and top with mozzarella cheese, leftover turkey and sweet potatoes. Toast on low for an additional 2 minutes or until cheese is melted.
  • BBQ Turkey Burger Bowl: Mix turkey with BBQ sauce. Put together Turkey Burger Bowl as instructed above.
  • Turkey Tacos: Use leftover cooked turkey to prepare tacos in hard or soft shell tortillas. Top with salsa, cilantro, avocado and hot sauce. Serve with a side of beans.
  • Stuffed Peppers: Use your leftover meat to throw together stuffed peppers. Partially bake your hallowed out bell peppers. While your peppers are baking combine some farro (or whole grain rice), beans, sauce and chopped onions in a bowl. Remove partially baked peppers from oven and stuff mixture into peppers. Bake until peppers are tender and serve.

Ingredients

Scale

Ground Turkey:

1/4 teaspoon extra virgin olive oil

1 pound ground turkey breast

1/2 cup onion, chopped

1/4 teaspoon chili powder (optional)

1 teaspoon cumin

1/2 teaspoon dried cilantro

1 pinch Himalayan pink salt

1 pinch pepper

Sweet Potatoes:

2 large sweet potatoes, peeled and chopped into small cubes

1 teaspoon extra virgin olive oil

1 pinch Himalayan pink salt

1 pinch pepper

Toppings:

1/4 cup white sharp cheddar cheese

1 & 1/2 avocados, sliced

4 heaping handfuls of spinach


Instructions

Sweet Potatoes:

  1. Preheat oven to 400 degrees.
  2. Chop sweet potatoes into small cubes. Place chopped potatoes on a large baking pan. Coat potatoes with EVOO, salt and pepper. Use your hands to massage EVOO into potato pieces and evenly spread them in a single layer on the pan. Bake for 30 minutes, tossing potatoes at halfway mark. Start cooking turkey burger at midway point.

Turkey Burger:

  1. In a large pan, melt coconut oil over medium-high heat. Add chopped onions, salt and pepper. Sauté onions for 4 minutes, stirring occasionally so onions don’t burn.
  2. Turn heat down to medium and add ground turkey, chili powder, ground cumin and cilantro. Cook turkey until it is no longer pink, about 10-minutes. Add additional salt and pepper to taste. Break meat up with the side of spatula while cooking.

Plating Burger Bowls:

  1. Place a heaping handful of spinach in four large bowls. Evenly divide and top each bowl with ground turkey, sweet potatoes and cheese.
  2. Microwave each burger bowl for 30-45 seconds until cheese has melted and spinach has wilted slightly. For best flavor, it’s important to wilt spinach slightly. (If you prefer not to use the microwave, place each bowl in the oven on low heat for 4-5 minutes.)
  3. Top each bowl with diced avocado and serve. ENJOY!
