This Italian inspired Grilled Caprese Chicken topped with tomato, basil, mozzarella and balsamic will knock your socks off.

It’s simple to prepare and has little to no clean-up, making it a perfect meal on a busy night. Pair it with a plate of zucchini noodles and savor the flavor!

What should I serve my Caprese Chicken with?

Serve each chicken breast with zucchini noodles, baked spaghetti squash or a 1/4 cup of FfL-approved 100% whole wheat pasta. Make the chicken your main dish and eat the pasta as a side. If you want to prep ahead, cook zucchini noodles, spaghetti squash or pasta on meal prep day.

Can I cook my Caprese Chicken in a pan, rather than on the grill?

Absolutely! Simply follow the instructions below.

A creative way to reuse your leftovers:

  • Open-Faced Focaccia Sandwich or Wrap: Spread pesto over a slice of bread or whole grain wrap. Top with leftover chicken, greens of choice (arugula or spinach are great options), tomato, basil and a slice of mozzarella cheese. Toast and enjoy!
  • Quesadilla style! Add leftovers to a tortilla. Top with a second tortilla. Grill it or garnish with avocado.

Instructions

  1. Heat a grill (or greased pan) to medium-high heat. Evenly sprinkle salt and pepper over chicken. Grill the chicken until golden brown on each side. If cooking in a pan, cover with a lid and reduce heat to medium.
  2. When chicken is 2 minutes from being done, place 1 to 2 tomato slices, 1 basil leaf and a slice of mozzarella on each breast. Cover. When chicken is completely cooked through and no longer pink in the center, tomatoes have softened and cheese is melted, remove from heat.
  3. Transfer to a serving dish and drizzle balsamic over each breast.

Notes

Tip: Prior to cooking, pound the chicken breasts to uniform thickness.
