Instructions

  1. Combine the chicken rub ingredients in a medium-size bowl. Toss and coat the chicken evenly in the rub mixture.

  2. Heat 1 & 1/2 teaspoons of extra virgin olive oil in a large non-stick skillet over medium-high heat. Add the chicken and cook for 2 minutes on each side. Transfer the chicken to a plate.
  3. Heat the remaining 1 & 1/2 teaspoons of extra virgin olive oil in the same skillet. Add onions, mushrooms, garlic and a pinch of salt. Cook until tender, 3 to 5 minutes.
  4. Stir the broth, mustard and quinoa into the vegetable mixture. Bring to a boil, then cover, reduce heat and simmer for 15 minutes.
  5. Slice the chicken into pieces.
  6. Add the spinach into the mixture, stir and nestle the chicken into the quinoa. Cook (covered) until the liquid is almost absorbed and the chicken is cooked through, 10-14 minutes. Remove from heat, plate and enjoy! Optional: Garnish your meal with freshly chopped green onion.
  7. (If you don’t have a lid large enough to fit your pan, cover it with a baking sheet.)
