Description
This easy, one-pot recipe is perfect during a busy week. The rub used to flavor the chicken adds a spicy, savory note to this hearty, vegetable-packed meal. Simmering the mushrooms, quinoa, spinach and chicken creates a healthy comfort food you just can’t beat. You can prep the onions and mushrooms ahead of time for a quick, healthy meal with minimal cleanup.
Ingredients
Chicken Rub Ingredients:
- 1 teaspoon rosemary
- 1/2 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon Himalayan pink salt
- 1/4 teaspoon black pepper
Other Ingredients:
- 3 teaspoons extra virgin olive oil, divided
- 1 & 1/2 pounds chicken breasts (about 3 medium breasts)
- 1 & 1/2 cups finely chopped onion (1 small onion)
- 16 ounces sliced baby bella mushrooms
- 1 tablespoon minced garlic
- 2 & 1/4 cups chicken broth
- 1 tablespoon Dijon Mustard
- 1 cup red quinoa
- 3 cups spinach
- chopped green onion (optional garnish)
Instructions
- Combine the chicken rub ingredients in a medium-size bowl. Toss and coat the chicken evenly in the rub mixture.
- Heat 1 & 1/2 teaspoons of extra virgin olive oil in a large non-stick skillet over medium-high heat. Add the chicken and cook for 2 minutes on each side. Transfer the chicken to a plate.
- Heat the remaining 1 & 1/2 teaspoons of extra virgin olive oil in the same skillet. Add onions, mushrooms, garlic and a pinch of salt. Cook until tender, 3 to 5 minutes.
- Stir the broth, mustard and quinoa into the vegetable mixture. Bring to a boil, then cover, reduce heat and simmer for 15 minutes.
- Slice the chicken into pieces.
- Add the spinach into the mixture, stir and nestle the chicken into the quinoa. Cook (covered) until the liquid is almost absorbed and the chicken is cooked through, 10-14 minutes. Remove from heat, plate and enjoy! Optional: Garnish your meal with freshly chopped green onion.
- (If you don’t have a lid large enough to fit your pan, cover it with a baking sheet.)
