- 3 large peaches, pitted and halved
- 1 teaspoon extra virgin olive oil
- 6 tablespoons goat cheese
- 3 teaspoons balsamic vinegar

- Coat peaches evenly with olive oil. Grill peaches flesh side down until slightly charred (approximately 3-4 minutes at medium-high temperature).

- Turn peaches flesh side up, top each with 1 tablespoon goat cheese and grill for approximately 1 minute, until goat cheese is warm and slightly melted. Remove from heat, drizzle each peach with 1/2 teaspoon of balsamic vinegar and serve.
