  1. Coat peaches evenly with olive oil. Grill peaches flesh side down until slightly charred (approximately 3-4 minutes at medium-high temperature).
  2. Coat peaches evenly with olive oil. Grill peaches flesh side down until slightly charred (approximately 3-4 minutes at medium-high temperature).
  3. Turn peaches flesh side up, top each with 1 tablespoon goat cheese and grill for approximately 1 minute, until goat cheese is warm and slightly melted. Remove from heat, drizzle each peach with 1/2 teaspoon of balsamic vinegar and serve.

Notes

This method for grilling peaches also works well with nectarines and plums.
