Description
Fresh, flavorful ingredients bring this Mexican-inspired casserole together in minutes! Made with warm corn tortillas, eggs, salsa, shredded cheese and avocado, this Huevos Rancheros Breakfast Casserole is the ultimate quick-and-easy comfort dish. It can be served as a delicious breakfast or as a simple weeknight dinner.
Ingredients
- 2–4 whole-grain tortilla wraps (depending on the size of tortilla you’re using)
- 1 cup salsa
- 1/4 cup black beans
- 4–6 large eggs
- 2 tablespoons fresh cilantro leaves
- 3 tablespoons chopped onion (optional)
- 1/4 cup queso fresco or shredded Mexican cheese
- 1/2 avocado, sliced

- If preparing this meal for a crowd, see notes below.
- Preheat oven to 350 degrees. Grease an 8×8 baking dish. if you’re making this for a larger crowd, use a 12×16 baking dish.
- Tear the tortillas into 1-inch pieces and spread them evenly in the baking dish. Cover the tortilla pieces with salsa, adjusting the amount if necessary. If adding meat or beans, layer them on top of the salsa. If you love beans, feel free to add extra.
- Use a spoon to create shallow holes in the salsa for the eggs. For instance, if you’re using 4 eggs, make 4 shallow holes. Gently crack an egg into each hole. Sprinkle cilantro, onion, and cheese on top. We recommend using no more than 10 eggs in a pan, as the overcrowding can significantly increase the cooking time.
- Bake for 12-14 minutes, or until the egg whites are set. If cooking for a crowd, extend the baking time to 22-25 minutes. This may vary based on your oven’s temperature and how crowded the pan is. Keep in mind that the eggs will continue to cook from the residual heat of the pan even after you remove them from the oven.
- Plate, top with avocado slices and serve immediately.

Suggested serving sizes: (adjust onions, salsa, cheese and cilantro as necessary)
For 1 person, use a standard 8×4 loaf pan, one tortilla and two eggs.
For 2-4 people, use an 8×8 baking dish, 2-4 tortillas and 4-6 eggs. Bake for 12-14 minutes.
For 5+ people, use a 12×16 baking dish, 3+ tortillas and 8-10 eggs. Double the amount of toppings. Bake for 22-25 minutes.
Dairy-free/Vegetarian: Eliminate the cheese to make this dish dairy-free/vegetarian.
Paleo: Omit the beans.
