Hidden Veggie BBQ Burgers (with Finely Chopped Mushroom)

Adult-friendly and kid-approved, these juicy Hidden Veggie BBQ Burgers boast hidden veggies that your family will never suspect.

Every day, dining rooms across America erupt into a battle of women pleading and begging with their families to eat their veggies. Moments like these are enough to make even the most resilient woman begin to dread mealtime.

This leveled-up version of a traditional burger adds finely chopped mushrooms into the mix, boosting the nutritional value without anyone ever suspecting it. Mushrooms are easily camouflaged in this meal because they match their surroundings (as far as color) so no one questions what’s in the burgers. Hats off to anyone who would ever notice!

Pro tip: You can use this idea and add finely chopped mushrooms in almost any beef recipe, such as Sloppy Joes.

Can I prep these ahead?

Yes, follow the prep instructions (stop just before baking). Stack each burger between parchment paper, store in an airtight container and refrigerate overnight. Remove from fridge and cook.

How to serve your burgers

They can be served on romaine, in a wrap or a bun, depending on your preference. Both of our families typically enjoy their burger on a bun and we love to eat them on romaine (this way we have lots of room for our Crispy Baked Sweet Potato Fries that we often serve up alongside these juicy delights). One of our all-time favorite ways to top these delicious BBQ Burgers is with homemade Pimento Cheese.

Ways to reinvent your leftovers

  • In a grilled wrap with pickles, sprouts, mustard and Swiss
  • On Taco Tuesday—just crumble the leftover burger meat in tacos, a quesadilla or on a taco salad
  • Mixed in with shell pasta, a little cheddar and cottage cheese for a savory side dish
  • In FfL’s California Burger Bowl
  • In a stuffed pepper
  • Mixed in with scrambled eggs (add crumbled meat and salsa just before the eggs are completely cooked) and serve with avocado toast for a well-rounded breakfast
  • Crumbled on top of a BBQ and cheese bagel pizza

Instructions

  1. Preheat cast iron pan, nonstick pan or grill to medium-high heat.
  2. In a medium bowl, combine ground beef, BBQ sauce, Worcestershire sauce, mushrooms, salt and pepper. Divide beef into four to six patties and pat each patty out, about 1/2-inch thick.
  3. Grill patties, approximately 5 minutes each side, until cooked to desired temperature (we recommend medium to medium-well). Top each burger with cheese of choice and cover, allowing cheese to melt completely, about a minute. Remove burgers from heat, plate on buns or a bed of greens. Top with desired toppings and enjoy.

Notes

If your picky eater tends to investigate their meals, you can puree mushrooms in a blender with BBQ and Worcestershire sauce. Mix with salt, pepper and beef as directed.

We recommend organic ingredients when feasible.

Always check for FfL-friendly ingredients.
