Skinny Mango Mojitos

Cool, refreshing and completely delicious, these fresh Skinny Mango Mojitos are an easy rum drink to enjoy on the deck with friends during cocktail hour.

If you’ve never tried mint in a cocktail before, you’ll be pleasantly surprised. The fresh mint and lime juice balance out the sweetness from the mango, making this drink the perfect way to cool down on a hot day.

As the days get longer and spring turns into summer, we hope that you’ll find a great place to relax outdoors and enjoy one of these refreshing, delicious Skinny Mango Mojitos.

Why blend rather than muddle?

Normally when making a mojito, you muddle the mint and lime in a cocktail shaker. You can absolutely do this, but we’ve had the most success with making a fresh puree in the blender. The consistency seems to turn out better and the flavor exceeds what any muddler can do.

The ease of making a fresh puree in the blender rather than muddling mint and lime makes this recipe a breeze to prepare. Ingredients

Scale
  • 1 cup frozen mango
  • 12 large fresh mint leaves
  • 4 oz. clear rum (we use Bacardi)
  • 1 oz. lime juice
  • 1 cup club soda, chilled
  • 1 cup crushed ice

Instructions

  1. In a high-speed blender, pulse the frozen mango, 10 mint leaves, rum and lime juice until pureed.
  2. Add club soda to puree mixture and stir.
  3. Pour mojito mixture into two glasses over ice. For a huge burst in flavor, rub the rim of your glasses with a slice of lime and a mint leaf prior to serving. Top the drink with a fresh sprig of mint and a slice of fresh mango to finish the drink off perfectly.
